What the guide says: Well thought-through dishes combine modern and classic elements and seasonal Welsh produce forms the backbone of the menu.

1. Felin Fach Griffin
Food: Regional
Where: Brecon
What the guide says: Located in picturesque countryside; a rather unique pub with bright paintwork, colourful artwork and an extremely laid back atmosphere. It was awarded a Bib Gourmand, the guide’s secondary award after a Michelin star.

Where: Crickhowell
What the guide says: The menu offers honest pub classics alongside more elaborate specials.

3. The Dolaucothi Arms
Food: British traditional
Where: Carmarthenshire
What the guide says: 300-year-old drover’s inn in the picturesque Cothi Valley; it’s a cosy, rustic kind of place and the garden looks out over the river.
4. Bell at Skenfrith
Food: Classic cuisine
Where: Monmouthshire
What the guide says: Well-run pub in a verdant valley, offering hearty, classical cooking with the occasional ambitious twist and using ingredients from the organic kitchen garden.
