Smoked Salmon Frittatas on the Mind

One of the best summer foods is Smoked Salmon. Delicious and healthy, Smoked Salmon provides a lot of protein without heating up the house. And luckily for us, Brecon Beacons has it’s own smokery, Black Mountains Smokery, and their smoked selection is a taste to remember.

Keeping with the ‘healthiness’ theme, we picked a Smoked Salmon Frittata as a great recipe to highlight the diversity of Salmon and to pay homage to our local smokery.

One of the best parts about this recipe is the freedom you have to change what you like. Whether you would like spinach or mushrooms in your frittata, anything is possible!

Ingredients 

  • 1 tsp olive oil
  • 2 spring onions sliced
  • 50g of chopped greens (watercress, spinach, etc.)
  • 75g smoked salmon
  • 2 large eggs
  • salt & pepper to taste

Method

Wash all your ingredients first, from the onions to the greens. Use whatever method you find best for chopping up the onions and greens, It’s always fun to vary up whatever recipe you’re using by trying out new ways to cook things.

The next bit is also fairly simple. Simply heat the olive oil in a pan and add the onions, greens, and salmon. Stir fry for a minute.

After that, beat the egg with the seasoning you prefer (I’m a fan of dill weed and minced garlic, myself) and mix with the rest of the ingredients in the pan. The best way to get that firm and fluffy frittata inside is to cook it on a low heat for a long time, covering it throughout so that the frittata is flavourful inside and out
